The blend combines sémillon and sauvignon blanc from selected plots on fine sandy gravel soils. Château d'Esclans Les Clans 2021 shows the more serious side of Provence rosé. This is a dry, still wine from Côtes de Provence, made from grapes grown in the château's own vineyards. Selected parcels of old-vine Grenache, Vermentino and Syrah give it more depth and structure than a light, casual rosé.
The winemaking also points clearly towards a gastronomic style. The grapes are handled at low temperature to protect freshness, then fermented and matured in large French oak barrels, using a mix of new and used wood. Valdespino Tio Diego Amontillado is a dry sherry from the D.O. Jerez-Xérès-Sherry in Andalusia, produced by Bodegas Valdespino in Jerez de la Frontera. Its identity is closely linked to Pago de Macharnudo Alto, specifically Viña Valdespino. Chateau Pedesclaux 2016 is the grand vin of the estate in Pauillac, Bordeaux. As a Cinquième Grand Cru Classé from the 1855 classification, it carries the weight of a recognised Pauillac name, but this vintage also has a more specific point of interest: 2016 is described as the first vintage in the history of Chateau Pedesclaux to bring Cabernet Sauvignon, Merlot, Petit Verdot and Cabernet Franc together in the grand vin blend.
The wine comes from Garonne gravel over a limestone subsoil, with harvesting and selection carried out in a notably precise way. Grapes were picked by hand in crates, sorted by bunch and berry, and vinified by gravity without pumping. Pascal Prunier-Bonheur Auxey-Duresses Vieilles Vignes 2022 is a white Burgundy from Auxey-Duresses in the Côte de Beaune. It is made from chardonnay grown on two old parcels on the eastern slope of the Auxey-Duresses valley. Imperial 34y SMOS is a whisky with a story already built into the bottle. Imperial closed its doors for the final time in 1998, so mature releases from this Speyside distillery have become increasingly hard to find. This single malt was drawn from one bourbon barrel after more than 34 years of maturation and bottled by The Single Malts of Scotland for the Director's Special series.
Only 162 bottles were produced, making this a very focused release rather than a whisky made to be widely available. Distilled in 1990 and bottled in 2024 at cask strength, it captures one individual cask of Imperial at a remarkable age, with the soft and juicy style for which the distillery is sought after by malt fans.

Valdespino Contrabandista Amontillado is a medium dry sherry from Jerez, shaped by the contrast between mature Amontillado and a small addition of Pedro Ximénez. The result keeps the nutty, lightly oxidative identity of Amontillado, but with a softer and more rounded edge than a fully dry style.
Its base is Palomino Fino, fermented dry and first aged biologically under flor. The wine is then fortified further to 18%, the flor disappears, and maturation continues oxidatively in the Amontillado solera system. A measured proportion of Pedro Ximénez is blended in afterwards to create the medium dry character. With an average age of 15 years, Contrabandista has enough maturity for its Amontillado side to come through clearly.
