Les Griffons de Pichon Baron 2021 is a dry red Pauillac from Bordeaux, produced by Château Pichon Baron. It is one of the estate's two second wines and has been part of the range since the 2012 vintage. The fruit comes mainly from gravel-rich plots close to the Gironde estuary, a source the estate regards as especially well suited to cabernet sauvignon.The 2021 blend is almost evenly split between cabernet sauvignon and merlot, with a clear contribution from petit verdot. That gives the wine a recognisably Pauillac feel: fresh, structured and energetic, closer to a cabernet-driven classical profile than to a deliberately soft or rounded style. Eighteen months in barriques, 40% new and 60% one-year-old, add support while keeping the wine's line and tension at the centre.
The vintage itself was demanding. Frost, cool and wet periods and low yields made careful selection essential, while drier weather from mid-August helped the cabernets ripen well. Vinification was carried out plot by plot in wooden and stainless-steel vats, with extraction guided by tasting during fermentation.
