Les Griffons de Pichon Baron 2021 presents Pauillac in a classical, fresh and firmly structured vintage. This red Bordeaux comes from Château Pichon Baron, a Deuxième Grand Cru Classé from the 1855 classification. Within the estate, Les Griffons sits alongside Les Tourelles de Longueville as one of the second wines, with a style the château describes as close to the Grand Vin in aromatic profile and structure.The 2021 blend brings together cabernet sauvignon, merlot and petit verdot, sourced from gravel-rich plots near the Gironde estuary. That left-bank setting matters: Médoc gravel, maritime influence and the suitability of the site for cabernet sauvignon all shape the wine's identity. The growing season was demanding, with frost, rain and mildew pressure, yet the drier spell from mid-August helped the grapes, especially the cabernet, reach better maturity. Yields were low.
In the cellar, the wine was vinified plot by plot in wooden and stainless-steel vats. For this vintage, the château placed extra emphasis on fruit quality, including a longer cold pre-fermentation phase. Maturation lasted 18 months, using 40% new oak and 60% one-year-old barrels. At Drankenshop Broekmans, we see this magnum as a particularly interesting choice when someone is looking for a serious Pauillac with structure, origin and ageing potential, without stepping straight into the Grand Vin.
