Zeni Recioto Valpolicella Classico 2019 Demi is a sweet red wine from Veneto, made in the classic Valpolicella area in the hills north of Verona. The 37.5 cl half-bottle format suits this style particularly well: concentrated, generous and often poured in smaller glasses at the end of a meal.The wine is based on Corvina, Rondinella and Molinara, from hand-selected grapes grown in hillside vineyards. Its character comes from the traditional Recioto method, where the bunches are dried for around three months in small crates or on trays. During this time, sugars, extract and aromas become more concentrated before fermentation begins.
Fermentation is stopped while natural sweetness remains in the wine. Maturation then takes place in large oak casks, followed by a short period in stainless steel. The result is a red dessert wine with the depth of dried grapes, yet with enough freshness to keep the sweetness lively.
