Domaine Billaud-Simon Chablis 1er Cru Les Vaillons 2022 is a white Burgundy with a very clear sense of place. Les Vaillons takes its name from a small valley, and this wine comes from a 0.295-hectare parcel with a south to south-west exposure. The very stony clay-limestone soils over Kimmeridgian subsoil give the wine that unmistakable Chablis line: fresh, precise and quietly saline.
The 2022 growing season was warm and dry, although rain at the end of July and again in mid-August helped the vines through the drought and supported ripening. Billaud-Simon began harvesting on 1 September, including Les Vaillons. For this vintage, six separate plots within Vaillons were picked and vinified apart before blending, preserving different facets of the Premier Cru site.

Domaine Billaud-Simon Chablis 1er Cru Mont de Milieu 2022 is a white Burgundy from Chablis, made from chardonnay and rooted in one of the appellation's premier cru sites. Mont de Milieu has a particularly evocative name: historically, the hill marked a boundary between Chablis, then linked with Champagne, and Fleys, under the Duchy of Burgundy.
The wine is closely tied to its Chablis setting. Domaine Billaud-Simon Chablis 1er Cru Montée de Tonnerre 2022 comes from one of the most expressive Premier Cru sites in Chablis. Montée de Tonnerre sits on the right bank of the Serein, in line with the Grand Cru slope, and that setting says a great deal about the wine: tension, limestone-driven precision and a distinctly mineral Chablis identity.
Made entirely from chardonnay, the wine comes from Kimmeridgian soils dominated by limestone-rich clay. Fermentation takes place in stainless steel, with alcoholic and malolactic fermentations following natural processes. Ageing lasts 14 to 16 months, mainly in tank, while the very small proportion of oak mentioned for this vintage is there for texture rather than overt aroma.

It is a separate village-level cuvée, selected from some of the domaine's better parcels, close to Premier Cru and Grand Cru vineyards.
Made from 100% Chardonnay, it comes from Chablis in northern Burgundy. The vines grow on Kimmeridgian soils, the limestone and fossil-rich ground so closely linked to the identity of the region. Domaine Billaud-Simon Chablis Grand Cru Valmur 2022 is a dry white Burgundy from one of the seven Grand Cru climats of Chablis. Valmur lies at the heart of the Grand Cru area, and this wine comes from a very small 0.13-hectare plot on the right bank, facing south-southwest.
The interest here lies in precision rather than embellishment. The vineyard is rooted in stony clay-limestone soils with colluvial deposits over Kimmeridgian subsoil, while the cellar work keeps the focus firmly on place: pneumatic pressing, cold settling, spontaneous fermentation with indigenous yeasts and 15 to 18 months of ageing in stainless steel tanks. The result is a Chablis Grand Cru shaped by citrus, freshness, mineral tension and structure rather than by overt oak influence.

Domaine Billaud-Simon Chablis Grand Cru Bougros 2022 Magnum is a dry white Grand Cru Chablis made from chardonnay. Bougros lies in the north-western part of the Chablis Grand Cru area, in a position that is relatively sheltered from wind and receives generous sun.
Its interest lies in the meeting point between the more sunlit personality of Bougros and the precision associated with Grand Cru Chablis. The vineyards sit on Kimmeridgian limestone and marl with fossil oyster shells, a setting reflected in the wine's mineral, saline and fresh impressions.
