Domaine Billaud-Simon Chablis Grand Cru Valmur 2022 is a dry white Burgundy from one of the seven Grand Cru climats of Chablis. Valmur lies at the heart of the Grand Cru area, and this wine comes from a very small 0.13-hectare plot on the right bank, facing south-southwest.The interest here lies in precision rather than embellishment. The vineyard is rooted in stony clay-limestone soils with colluvial deposits over Kimmeridgian subsoil, while the cellar work keeps the focus firmly on place: pneumatic pressing, cold settling, spontaneous fermentation with indigenous yeasts and 15 to 18 months of ageing in stainless steel tanks. The result is a Chablis Grand Cru shaped by citrus, freshness, mineral tension and structure rather than by overt oak influence.

Domaine Billaud-Simon is a French wine producer from the Chablis region in Burgundy, fully dedicated to white wines made from the Chardonnay grape. The estate was founded in the year 1815 and has a long history within this wine region. Located close to the Serein river, Domaine Billaud-Simon owns dozens of hectares of vineyards, including some plots in the prestigious Premier Cru and Grand Cru vineyards of Chablis. The wines are known for their pronounced mineral character and fresh style, something strongly influenced by the chalky soils of the region. Since 2014, the estate has been part of Domaine Faiveley, another well-known house from Burgundy, but Billaud-Simon operates under its own name and identity.
