Domaine Billaud-Simon Chablis 2023 is a dry white wine from Chablis AOC in Burgundy, made entirely from Chardonnay. This is the domaine's village-level Chablis rather than a Premier Cru or Grand Cru, and that makes it a clear introduction to the house style: fresh, mineral and precise, with ripe fruit giving the wine a little extra generosity.Billaud-Simon has been established in Chablis since 1815 and works with vineyards on both banks of the Serein. Its making is focused on clarity and freshness: hand harvesting, careful sorting, gentle pneumatic pressing and maturation mainly in tank, with only a limited role for oak in the final blend.

Domaine Billaud-Simon is a French wine producer from the Chablis region in Burgundy, fully dedicated to white wines made from the Chardonnay grape. The estate was founded in the year 1815 and has a long history within this wine region. Located close to the Serein river, Domaine Billaud-Simon owns dozens of hectares of vineyards, including some plots in the prestigious Premier Cru and Grand Cru vineyards of Chablis. The wines are known for their pronounced mineral character and fresh style, something strongly influenced by the chalky soils of the region.
