Domaine Billaud-Simon Chablis Grand Cru Les Clos 2022 comes from one of the most expressive sites in Chablis. Les Clos is the largest and one of the best-known grands crus of the appellation, positioned between Valmur and Blanchots. Domaine Billaud-Simon's holding here covers 0.37 hectares on the right bank of the Serein, with a south to south-east exposure and Kimmeridgian soils marked by deep, dense white clay.That setting is central to the wine's identity. The estate describes Les Clos as a climat that brings structure and power, while the wine remains firmly rooted in the mineral, precise language of Chablis. The 2022 season brought a warm, dry summer, with rain at the end of July and in mid-August helping the grapes continue their ripening. This vintage is also notable because it is the first to include the parcel replanted in 2018 on the eastern side of Les Clos, close to Blanchot.
The wine was made from 100% Chardonnay, with pneumatic pressing, one night of cold settling and vinification in stainless steel tanks. Alcoholic and malolactic fermentations took place spontaneously with indigenous yeasts. Domaine Billaud-Simon is a French wine producer from the Chablis region in Burgundy, fully dedicated to white wines made from the Chardonnay grape. The estate was founded in the year 1815 and has a long history within this wine region. Located close to the Serein river, Domaine Billaud-Simon owns dozens of hectares of vineyards, including some plots in the prestigious Premier Cru and Grand Cru vineyards of Chablis. The wines are known for their pronounced mineral character and fresh style, something strongly influenced by the chalky soils of the region.
