Domaine Billaud-Simon Chablis 2023 Demi is the 37.5 cl half-bottle version of the domaine's village Chablis. It is still a dry white AOC Chablis from Burgundy, made entirely from Chardonnay, but in a more convenient size when a full bottle is more than the occasion needs.Rather than coming from one single climat, this wine is assembled from several parcels around Chablis, on both banks of the Serein. That broader origin suits the role of a village Chablis: it gives a clear impression of the appellation, with the limestone-rich Kimmeridgian soils often linked to the mineral and lightly saline side of the region.
The winemaking is aimed at keeping that freshness and sense of place intact. The grapes are sorted, gently pressed and the must is cold-settled before fermentation. Ageing is mainly in tank, with the 2023 blend also including a portion of cask-fermented wine. The result is a Chablis with ripe fruit and a juicy feel, while still keeping a focused, fresh line.

Domaine Billaud-Simon is a French wine producer from the Chablis region in Burgundy, fully dedicated to white wines made from the Chardonnay grape. The estate was founded in the year 1815 and has a long history within this wine region. Located close to the Serein river, Domaine Billaud-Simon owns dozens of hectares of vineyards, including some plots in the prestigious Premier Cru and Grand Cru vineyards of Chablis. The wines are known for their pronounced mineral character and fresh style, something strongly influenced by the chalky soils of the region. Since 2014, the estate has been part of Domaine Faiveley, another well-known house from Burgundy, but Billaud-Simon operates under its own name and identity.
