At Drankenshop Broekmans, Domaine Billaud-Simon Chablis Cuvée Tête d'Or 2022 is the kind of Chablis we like to introduce when someone wants more substance than a straightforward village wine, without moving into Premier Cru territory. It is a separate village-level cuvée, selected from some of the domaine's better parcels, close to Premier Cru and Grand Cru vineyards.Made from 100% Chardonnay, it comes from Chablis in northern Burgundy. The vines grow on Kimmeridgian soils, the limestone and fossil-rich ground so closely linked to the identity of the region. Domaine Billaud-Simon itself has deep roots in Chablis, dating back to 1815, and has been part of the Faiveley family since 2014.
For the 2022 vintage, fermentation and ageing took place mainly in stainless steel, with a limited proportion matured in French oak. The oak is not there to dominate; it adds texture, roundness and a little extra depth while keeping the wine's fresh, mineral line intact. This vintage was also the first growing season in which the domaine worked fully according to organic principles and began its official conversion process.
Serve it cool, around 10 to 12°C. It is a natural partner for refined fish dishes, shellfish, mussels, grilled sole or roasted cod. Young bottles may benefit from a little air, allowing the wine to open more fully in the glass.

Domaine Billaud-Simon is a French wine producer from the Chablis region in Burgundy, fully dedicated to white wines made from the Chardonnay grape. The estate was founded in the year 1815 and has a long history within this wine region. Located close to the Serein river, Domaine Billaud-Simon owns dozens of hectares of vineyards, including some plots in the prestigious Premier Cru and Grand Cru vineyards of Chablis. The wines are known for their pronounced mineral character and fresh style, something strongly influenced by the chalky soils of the region. Since 2014, the estate has been part of Domaine Faiveley, another well-known house from Burgundy, but Billaud-Simon operates under its own name and identity. The working method is characterized by a combination of traditional techniques and a modern approach in both vineyard and cellar, with the aim of bringing out the pure character of Chablis in the wine.
