Domaine Billaud-Simon Chablis 1er Cru Les Vaillons 2022 is a white Burgundy with a very clear sense of place. Les Vaillons takes its name from a small valley, and this wine comes from a 0.295-hectare parcel with a south to south-west exposure. The very stony clay-limestone soils over Kimmeridgian subsoil give the wine that unmistakable Chablis line: fresh, precise and quietly saline.
The 2022 growing season was warm and dry, although rain at the end of July and again in mid-August helped the vines through the drought and supported ripening. Billaud-Simon began harvesting on 1 September, including Les Vaillons. For this vintage, six separate plots within Vaillons were picked and vinified apart before blending, preserving different facets of the Premier Cru site.

Domaine Billaud-Simon Chablis 1er Cru Mont de Milieu 2022 is a white Burgundy from Chablis, made from chardonnay and rooted in one of the appellation's premier cru sites. Mont de Milieu has a particularly evocative name: historically, the hill marked a boundary between Chablis, then linked with Champagne, and Fleys, under the Duchy of Burgundy.
The wine is closely tied to its Chablis setting. The Kimmeridgian soils, rich in limestone, marine sediments and shell remains, are part of the mineral and iodine-like expression that Domaine Billaud-Simon associates with its style. For the 2022 vintage, the fruit came from four parcels within Mont de Milieu, giving the wine a clear identity within the estate's premier cru range.
The 2022 vintage is described as pure, (…)Domaine Billaud-Simon Chablis 1er Cru Montee De Tonnerre 2022

Domaine Billaud-Simon Chablis 1er Cru Montée de Tonnerre 2022 comes from one of the most expressive Premier Cru sites in Chablis. Montée de Tonnerre sits on the right bank of the Serein, in line with the Grand Cru slope, and that setting says a great deal about the wine: tension, limestone-driven precision and a distinctly mineral Chablis identity.
Made entirely from chardonnay, the wine comes from Kimmeridgian soils dominated by limestone-rich clay. Fermentation takes place in stainless steel, with alcoholic and malolactic fermentations following natural processes. Ageing lasts 14 to 16 months, mainly in tank, while the very small proportion of oak mentioned for this vintage is there for texture rather than overt aroma.

Domaine Billaud-Simon Chablis 2022 Magnum is a dry white wine from Chablis AOC in Burgundy, made from 100% chardonnay. This is the domaine's village Chablis rather than a Premier Cru or Grand Cru, yet it remains firmly rooted in the classic Chablis identity: freshness, tension, limestone-derived mineral expression and a subtle saline edge.
Domaine Billaud-Simon has been part of Chablis since 1815 and has belonged to the Faiveley family since 2014. For the 2022 Chablis, the grapes are sorted after harvest and gently pressed using pneumatic presses. Fermentation and malolactic conversion take place in temperature-controlled stainless steel tanks. No oak ageing is mentioned for this cuvée, so the emphasis stays on clarity, fruit purity and the direct expression of the (…)Domaine Billaud-Simon Chablis 2023

Domaine Billaud-Simon Chablis 2023 is a dry white wine from Chablis AOC in Burgundy, made entirely from Chardonnay. This is the domaine's village-level Chablis rather than a Premier Cru or Grand Cru, and that makes it a clear introduction to the house style: fresh, mineral and precise, with ripe fruit giving the wine a little extra generosity.
Billaud-Simon has been established in Chablis since 1815 and works with vineyards on both banks of the Serein. The 2023 Chablis is drawn from several parcels, with some must sourced through regular partners. Its making is focused on clarity and freshness: hand harvesting, careful sorting, gentle pneumatic pressing and maturation mainly in tank, with only a limited role for oak in the final blend.

Domaine Billaud-Simon Chablis 2023 Demi (37,5cl)

Domaine Billaud-Simon Chablis 2023 Demi is the 37.5 cl half-bottle version of the domaine's village Chablis. It is still a dry white AOC Chablis from Burgundy, made entirely from Chardonnay, but in a more convenient size when a full bottle is more than the occasion needs.
Rather than coming from one single climat, this wine is assembled from several parcels around Chablis, on both banks of the Serein. That broader origin suits the role of a village Chablis: it gives a clear impression of the appellation, with the limestone-rich Kimmeridgian soils often linked to the mineral and lightly saline side of the region.
The winemaking is aimed at keeping that freshness and sense of place intact. The grapes are sorted, gently pressed and the must is cold-settled (…)Domaine Billaud-Simon Chablis Cuvee Tete D'Or 2022

At Drankenshop Broekmans, Domaine Billaud-Simon Chablis Cuvée Tête d'Or 2022 is the kind of Chablis we like to introduce when someone wants more substance than a straightforward village wine, without moving into Premier Cru territory. It is a separate village-level cuvée, selected from some of the domaine's better parcels, close to Premier Cru and Grand Cru vineyards.
Made from 100% Chardonnay, it comes from Chablis in northern Burgundy. The vines grow on Kimmeridgian soils, the limestone and fossil-rich ground so closely linked to the identity of the region. Domaine Billaud-Simon itself has deep roots in Chablis, dating back to 1815, and has been part of the Faiveley family since 2014.
For the 2022 vintage, fermentation and ageing took (…)Domaine Billaud-Simon Chablis Gran Cru Valmur 2022

Domaine Billaud-Simon Chablis Gran Cru Valmur 2022

Domaine Billaud-Simon Chablis Grand Cru Valmur 2022 is a dry white Burgundy from one of the seven Grand Cru climats of Chablis. Valmur lies at the heart of the Grand Cru area, and this wine comes from a very small 0.13-hectare plot on the right bank, facing south-southwest.
The interest here lies in precision rather than embellishment. The vineyard is rooted in stony clay-limestone soils with colluvial deposits over Kimmeridgian subsoil, while the cellar work keeps the focus firmly on place: pneumatic pressing, cold settling, spontaneous fermentation with indigenous yeasts and 15 to 18 months of ageing in stainless steel tanks. The result is a Chablis Grand Cru shaped by citrus, freshness, mineral tension and structure rather than by overt oak influence.

Domaine Billaud-Simon Chablis Grand Cru Bougros 2022 Magnum is a dry white Grand Cru Chablis made from chardonnay. Bougros lies in the north-western part of the Chablis Grand Cru area, in a position that is relatively sheltered from wind and receives generous sun.
Its interest lies in the meeting point between the more sunlit personality of Bougros and the precision associated with Grand Cru Chablis. The vineyards sit on Kimmeridgian limestone and marl with fossil oyster shells, a setting reflected in the wine's mineral, saline and fresh impressions.
Domaine Billaud-Simon is based in Chablis and focuses exclusively on white wines from chardonnay. For Bougros, the domaine indicates that it may work, depending on the vintage, with grapes or wine from trusted (…)Domaine Billaud-Simon Chablis Grand Cru Les Clos 2022

Domaine Billaud-Simon Chablis Grand Cru Les Clos 2022
Temporarily sold out
Domaine Billaud-Simon Chablis Grand Cru Les Clos 2022 comes from one of the most expressive sites in Chablis. Les Clos is the largest and one of the best-known grands crus of the appellation, positioned between Valmur and Blanchots. Domaine Billaud-Simon's holding here covers 0.37 hectares on the right bank of the Serein, with a south to south-east exposure and Kimmeridgian soils marked by deep, dense white clay.
That setting is central to the wine's identity. The estate describes Les Clos as a climat that brings structure and power, while the wine remains firmly rooted in the mineral, precise language of Chablis. The 2022 season brought a warm, dry summer, with rain at the end of July and in mid-August helping the grapes continue their ripening. This vintage is also (…)
