Chateau Dassault 2021 is a red Bordeaux from Saint-Emilion, built around a Merlot-led blend with Cabernet Franc and Cabernet Sauvignon. The fruit comes from the northern slopes of Saint-Emilion, where clay and sand soils help shape a wine that is described more by freshness and aromatic detail than by sheer volume.The 2021 vintage was handled with a strong focus on selection and precision. Harvesting was carried out by hand, followed by densimetric sorting, and the wine was vinified parcel by parcel in small temperature-controlled concrete vats, with some integral vinification in oak barrels. Maturation lasted 12 to 16 months, using new barriques alongside vats and amphorae.
Production for this vintage is listed at around 6,000 bottles, so it is a notably limited release.
