Château Canon La Gaffelière 2021 Demi is the grand vin of Château Canon La Gaffelière in a 37.5 cl half bottle, from Saint-Émilion Grand Cru. The smaller format is part of its appeal: it gives the chance to open a serious Bordeaux when a full bottle would simply be too much.The 2021 vintage is built around a notably Cabernet-influenced blend for Saint-Émilion: 45% Cabernet Franc, 35% Merlot and 20% Cabernet Sauvignon. The estate's vineyards lie at the foot of the slope south of the medieval village of Saint-Émilion, on clay-limestone and clay-sand soils. In the glass, the available notes point towards freshness, floral lift and fine structure rather than weight.
Vinification took place in wooden vats, with pneumatic pigeage and a 29-day cuvaison. The wine then spent 15 months on fine lees in barriques, 40% of them new, before being bottled at the château. It is also listed as organically certified under FR-BIO-10 and was not fined according to the château information.

Château Canon La Gaffelière is a French winery located in the renowned appellation of Saint-Emilion in Bordeaux.
