Pouilly-Fumé La Renardiere 2021 from Domaine Bouchie-Chatellier is a Loire white wine with a strong sense of place. It comes from Saint-Andelain, within the Pouilly-Fumé appellation, and is made from sauvignon blanc. Here, that grape takes on a very particular identity through clay and silex soils.La Renardiere is one of the domaine's key cuvées. The name refers to the estate's location near woodland once associated with foxes. The vineyards lie on the higher slopes around Saint-Andelain, where silex plays an important role in the soil. That background helps explain the wine's mineral, flinty and lightly smoky expression.
The winemaking is precise and restrained: gentle pressing, separate vinification of parcels, cool fermentation in stainless steel and ageing on fine lees. It keeps the sauvignon blanc clean and vivid, while giving the wine more shape through the middle of the palate.
