Billecart-Salmon is a family-owned house from Mareuil-sur-Ay in Champagne that has been run by successive generations of the same family since 1818. The brand has a long tradition in producing champagnes with a refined style, with a particular focus on elegance and freshness. The vineyards of Billecart-Salmon are spread across various crus, including prestigious areas such as the Montagne de Reims, the Vallee de la Marne and the Côte des Blancs. A large part of the grapes comes from their own vineyards, supplemented with carefully selected grapes from regular partners. Billecart-Salmon is known for its special attention to slow and cool fermentation of the juice, which, according to enthusiasts, contributes to the delicate character of their champagnes. The range includes both classic brut and vintage cuvées as well as iconic prestige champagnes such as the Clos Saint-Hilaire and Elisabeth Salmon Rosé. Although the house is not among the very largest producers, it is appreciated worldwide among connoisseurs and restaurants, thanks in part to its consistent quality and distinctive style.
