About AYALA
Ayala is a champagne house from the renowned French village of Aÿ in the Champagne region, with roots dating back to 1860. The house was founded by Edmond de Ayala and is thus one of the older champagne houses still in operation. Over time, Ayala has established itself as a producer of mainly fresh, dry champagnes, which is especially evident in their distinctive Brut Majeur. The style of Ayala is often described as elegant and light-footed, with relatively low dosage (added sugar), resulting in dry champagnes that are highly accessible. The grapes used are classic for the region: Pinot Noir, Chardonnay, and Pinot Meunier, with an emphasis on Chardonnay, which contributes to the fresh and lively character. After a period out of the spotlight, Ayala gained renewed energy when it was acquired in 2005 by the famous champagne house Bollinger.
