It is described as a Vino de Pasto: a still, unfortified wine that places Palomino Fino and a very specific vineyard origin at the centre of the glass.The fruit comes from San Cayetano within Pago Macharnudo, from Palomino Fino vines noted as planted in 1988. The calcareous, albariza-like soil and the saline, chalky identity linked to Macharnudo shape the wine's style: dry, tense and firmly rooted in place. Fermentation takes place with native yeasts in 615-litre vessels, without temperature control, followed by ageing under the influence of flor, without fortification.
