Les Griffons de Pichon Baron 2019 is a red Pauillac from Bordeaux, produced by Château Pichon Baron. It is one of the estate's second wines and has been made since the 2012 vintage, with a style centred on freshness, precision and energy.The 2019 blend is 59% merlot and 41% cabernet sauvignon. Most of the fruit comes from gravel-rich plots close to the Gironde estuary, a setting closely linked to the structure and tension associated with Pauillac. The wine was vinified with careful parcel selection and matured for 18 months in barriques, 60% new and 40% one-year-old.
This vintage was shaped by a wet spring, followed by a warm, dry summer. Rain at the end of September helped stabilise the harvest period, allowing the estate to continue picking with patience. Château Pichon Baron describes the 2019 as a wine with the structure for more than 20 years of cellaring, while also being approachable now.
