Flavour notes

The aroma shows a fresh, almost anise-like note with clear minerality. It comes across as lively and taut, with a saline, iodine-like impression that gives the sake its distinctive direction.

On the palate it is described as supple and creamy, led by pronounced iodic tones, subtle acidity and a pleasant bitterness. Peach, apricot, apple, pear and plum add fruit detail, while the finish is long and enveloping, with touches of dried fruit.

Product info about Sayori Saké 72cl

Sayori Saké 72cl is a Japanese Junmai sake from Asahara Shuzo in Saitama, on Honshu. Although it may sit alongside wine in a shop setting, it is properly a nihonshu: a fermented rice drink made from rice, water, koji and yeast. As a Junmai, it is made without added distilled alcohol.

The interest here lies in the way the sake is put together. It uses Hattan Nishiki rice polished to 70%, and the Nakadori designation refers to the middle portion of the pressing, collected after the first run and before the more forceful press. The product information also describes it as muroka, or unfiltered. That helps frame its lively, mineral and distinctly saline style.

Asahara Shuzo is a family brewery in Saitama, founded in 1882 by Zenjiro Asahara. The background matters, because Saitama is described in the product information as a less classical sake area, something that sits well with the brewery's more innovative outlook.

At Drankenshop Broekmans, we see this Sayori as a sake for the table rather than just a glass on its own. It can be served chilled or warm, and the suggested pairings point towards pronounced flavours: mackerel, oysters, dashi broths, grilled meat, sauced dishes and white meats such as poultry or pork. With only the last bottles remaining, it is also a sake whose current availability should not be taken for granted.

About ASAHARA

Asahara is a Japanese wine brand originating from the Saitama region, an area north of Tokyo that is not traditionally associated with wine production. The brand is linked to Asahara Winery, established in 1887, which makes it one of the older wineries in Japan. Asahara mainly focuses on producing wines made from both indigenous and international grape varieties, including the typically Japanese Koshu grape and more well-known types such as Chardonnay and Merlot. The vineyards are situated in a hilly, relatively cool climate, resulting in fresh and refined wines that often have light, elegant aromas. The winery combines traditional vinification techniques with modern insights, placing great emphasis on the local terroir and the character of the grapes used. Asahara is one of the examples of the growing Japanese wine industry that has been receiving more international recognition in recent decades and is known for its accessible, more subtle wine styles. Anyone interested in Japanese wine beyond the well-known sake will find Asahara a traditional, reliable address with a wide range for various occasions.
