Pouilly Fumé La Renardiere 2022 from Domaine Bouchie - Chatellier is a dry white Loire wine from the Pouilly-Fumé appellation near Saint-Andelain. Made from 100% Sauvignon Blanc, locally known as Blanc Fumé, it is a wine where place matters just as much as grape variety.The fruit comes from Sauvignon Blanc vines of around 30 years old on the higher slopes of Saint-Andelain. Silex-rich clay and Kimmeridgian marl are central to the identity of this cuvée, giving the wine its freshness, structure, length and distinctive flinty edge.
In the cellar, the approach is careful rather than showy. Parcels are vinified separately, the grapes are gently pressed and fermentation takes place slowly at cool temperatures in stainless steel. Part of the fruit receives a short skin maceration for added aromatic complexity, followed by time on the fine lees.
