El Amparo is an Ecuadorian rum made from sugar cane juice, built around the Cubana Negra cane variety. The cane is grown and harvested according to traditional practices carried through three generations, giving this rum a strong sense of agricultural origin rather than a polished, anonymous style.
Fermentation begins naturally with indigenous yeasts in vats of 1000 to 3000 litres and lasts 5 to 7 days, depending on the sugar concentration of the must at harvest. Distillation takes place in a single run through a 500-litre copper pot still. The spirit leaves the still at around 60%, and this first batch of El Amparo was bottled at that still strength.
