Australia 2007 17y Elixir Trail is an artisanal rum from Queensland, bottled by Elixir Distillers as part of the Whisky Trail series. Its personality starts with the production approach: double distilled through column and pot still, then matured for seventeen years in American oak.
That age gives the rum a mature, developed feel, but the character described here is not only about oak. The available flavour profile points to a broad spread of impressions, with fruit, sweetness, gentle spice, wood and a light vegetal note all present in measured ways. It supports the description of a rich and complex rum without turning it into something one-dimensional.
