Bijito Junmai is a Japanese sake from Kyoto, produced by Kizakura, a sake producer founded in 1925. Despite often being discussed alongside wine, this is nihonshu: a fermented rice-based drink made with rice, water and koji, rather than grapes.
The junmai designation matters here, as it means the sake is made without added distilled alcohol. Bijito Junmai uses Koshi Hikari rice polished to around 70% of its original size before fermentation. That points to a clean, dry to gently rounded style, with clarity and finesse taking the lead over weight.
