PLANTATION BARBADOS XO 40° (PLANTATION BLEND) This Plantation classic is a blend from the West Indies Rum Distillery located in Barbados. Made from molasses, distilled in a Twin Column and Pot Still, and the rum has undergone a 'double ageing process'. First a tropical ageing between 8 and 15 years in Bourbon barrels, then a continental ageing between 2 and 10 years in a mix of white oak, bourbon and Ferrand barrels. Nose : floral and fruity start, also subtle scents of vanilla, cocoa and milk chocolate. Flavour : flavours of cinnamon, pastry and chocolate. Finish : sweet and smooth finish. |

VERMOUTH DEL PROFESSORE ROSSO 18° 75CL Del Professore is one of the only vermouths made 100% from Italian white and red wine, also the additional ingredients are 100% produced in-house. The aim is to honour the authentic Italian aperitif. The recipe draws on Piedmont tradition, including flavoured wine, pure cane sugar and various herbs such as alpine mint, almond, gentian and clove. An ageing period of at least six months in small oak barrels completes it. Del Professore Rosso meets the nose with a warm and soothing perfume of balsam and mint, balanced with aromas of bitter oils, orange peel and vanilla. Full and soft mouthfeel with a light, pleasant balsamic character, supported by some rhubarb and gentian; balanced by its subtle sweetness and slight tannic structure due to the time this vermouth spent in barrel. |
