
On 2 February, we celebrate Pancake Day, and we must admit that pancakes have a special place in our hearts. Therefore, the idea of letting this day go unnoticed is simply unthinkable. Indeed, for this occasion, we like to take our pancakes to the next level. How? By now I am sure you can fill in yourselves... with what we excel at, of course - spirits.
Where does Pancake Day come from?
Traditionally, we celebrate Candlemas on 2 February, a day that marks the end of the Christmas period and symbolises the returning light after the dark winter months. An age-old tradition on Candlemas is to eat pancakes, whose round shape symbolises the sun and the beginning of spring. And voilà ! This is how this day has evolved in different cultures to today's Pancake Day.
Step 1: making the basic batter
Before we give our variations, we briefly drop a recipe for a traditional pancake mix below.
Ingredients
- 200 g flour
- 2 tablespoons of sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 300 ml milk
- 1 egg
- 2 tablespoons melted butter
- Butter or oil for baking
Instructions
- In a large bowl sift the flour and mix it with sugar, baking powder and salt.
- In a separate bowl beat the egg and gradually add the milk while continuing to stir.
- Add the melted butter to the milk-egg mixture and stir well.
- Slowly pour the milk-egg mixture into the dry ingredients while continuing to stir. Mix until the batter is smooth and lump-free.
- Heat a frying pan over medium-high heat and add a little butter or oil to prevent sticking.
Step 2: Add a special touch to the batter
Whisky Walnut Pancakes
Ingredients
- Pancake mix
- A dash of good whisky
- Handful of chopped walnuts
- Maple syrup
Instructions
- Add a dash of whiskey to the batter.
- Add a handful of chopped walnuts.
- Fry the pancakes until they have a golden hue
- Serve with maple syrup and extra walnuts.

Rum-Roseberry pancakes
Ingredients
Pancake mix
Dark rum
Raisins

Instructions
- Soak sultanas in dark rum
- Add them to the batter.
- Bake the pancakes until golden brown
- Serve them with a topping of caramelised rum-raisins.
